  • 1 (14-ounce) can full-fat coconut milk, chilled
  • 1/2 cup fresh lemon juice
  • 1/2 cup granulated sugar
  • 2 cups ice cubes
  • lemon slices for garnish (optional)

Instructions

  1. Scoop the coconut cream: Scoop the thick coconut cream from the top of the chilled coconut milk can into a blender.
  2. Add ingredients: Add the remaining liquid from the can, lemon juice, sugar, and ice cubes.
  3. Blend: Blend on high until smooth, creamy, and slightly thickened.
  4. Adjust sweetness: Taste and adjust sweetness if needed.
  5. Serve: Pour into glasses and serve immediately, garnished with lemon slices if desired.
