Instructions
- Making the Mochi Dough: In a microwave-safe bowl, whisk together the sweet rice flour, watermelon juice, sugar, and food coloring until smooth. Microwave on high, stirring in between, until the mixture thickens.
- Shaping the Mochi: Dust a surface with starch, transfer the mochi dough, and let cool. Cut into squares or roll into balls. Press in chocolate chips or sesame seeds.
- Storage: Dust with starch to prevent sticking. Store in an airtight container at room temperature or refrigerate.
