Potato Salad:
- 2 lbs baby red potatoes (halved)
Dressing:
- 6 slices bacon (chopped)
- 1/2 cup diced yellow onion
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Cook Potatoes: Boil potatoes until tender, then drain.
- Prepare Dressing: Cook bacon until crisp, sauté onion, then add vinegar, mustard, sugar, salt, and pepper.
- Combine: Toss potatoes in dressing, add bacon and parsley. Serve warm.
Place the potatoes in a large pot, cover with water, and add a generous pinch of salt. Bring to a boil and cook for 12–15 minutes until fork-tender. Drain and set aside.
