Ingredients
Scale
Chicken and Vegetables
- 2 cups cooked chicken breast, chopped or shredded
- ½ cup cucumber, finely diced and drained
- ¼ cup red onion, finely chopped
- ½ cup cherry tomatoes, halved (optional)
Dressing
- 1 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- ¼ teaspoon salt
- â…› teaspoon black pepper
Optional
- ¼ cup crumbled feta cheese
Instructions
- Prepare the dressing: In a medium bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper. Mix thoroughly until the ingredients form a smooth and well-blended tzatziki dressing.
- Add the main ingredients: Add the chopped or shredded cooked chicken, finely diced and drained cucumber, finely chopped red onion, and halved cherry tomatoes (if using) to the dressing. Stir gently until all ingredients are evenly coated with the tzatziki mixture.
- Incorporate feta cheese: If desired, fold in the crumbled feta cheese gently to retain texture and flavor without breaking down the cheese too much.
- Chill and serve: Cover the bowl and refrigerate the salad for at least 30 minutes. This chilling time allows the flavors to meld and the salad to become more refreshing. Serve cold on its own, wrapped in lettuce leaves, or stuffed into pita bread for a delicious meal.
Notes
- Remove excess moisture from the cucumber by patting it dry or squeezing gently with a paper towel to prevent the salad from becoming watery.
- Using rotisserie or pre-cooked chicken breast can save time and enhance convenience without sacrificing flavor.
