Sweet Potatoes
- 4 medium sweet potatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 teaspoon smoked paprika
BBQ Chicken Filling
- 2 cups cooked and shredded BBQ chicken
- 1/2 cup plain Greek yogurt
- 1/4 cup BBQ sauce (plus extra for drizzling)
- 1/2 cup shredded cheddar cheese (plus extra for topping)
- 2 tablespoons chopped green onions
Instructions
- Preheat and prepare sweet potatoes: Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes thoroughly, then prick each several times with a fork. Rub each potato with olive oil to coat evenly and place them on a baking sheet.
- Bake sweet potatoes: Bake the sweet potatoes for 45 to 50 minutes until they are tender when pierced with a fork. Remove them from the oven and allow to cool slightly so you can handle them safely.
- Scoop out flesh: Slice each sweet potato in half lengthwise. Carefully scoop out most of the flesh into a mixing bowl, leaving a thin layer inside the skins to help keep their shape intact.
- Prepare filling: Mash the scooped sweet potato flesh lightly with a fork. Add Greek yogurt, shredded BBQ chicken, BBQ sauce, smoked paprika, salt, pepper, and shredded cheddar cheese. Mix well until all ingredients are fully combined.
- Fill and top potatoes: Evenly spoon the BBQ chicken mixture back into the sweet potato skins. Sprinkle the tops with extra shredded cheddar cheese.
- Bake again: Return the stuffed sweet potatoes to the oven and bake for an additional 10 to 15 minutes, or until the filling is heated through and the cheese is melted and bubbly.
- Garnish and serve: Remove from the oven, top with chopped green onions and an extra drizzle of BBQ sauce before serving warm.
