- Make the dough: In a mixing bowl, cream together the softened butter, plain yogurt, granulated sugar, and vanilla extract until smooth and well combined. Gradually add the flour and baking powder, mixing until a soft, pliable dough forms.
- Shape the cookies: Divide the dough into small, even-sized balls. Flatten each ball into a circle approximately 2 to 3 inches in diameter. Place a spoonful of cooled apple filling in the center of each circle.
- Seal the cookies: Fold the dough over the apple filling to enclose it completely, pinching and sealing the edges carefully to prevent filling leakage during baking.
