Description

These Tomato and Cream Cheese Sandwiches are a delightful combination of creamy, herbed cream cheese, fresh tomatoes, and optional accoutrements like basil and lettuce, all sandwiched between slices of whole grain or white bread. Perfect for a quick snack or a light lunch!

Ingredients

Scale

Bread:

  • 8 slices of whole grain or white sandwich bread

Cream Cheese Mixture:

  • 6 ounces cream cheese (softened)
  • 1 tablespoon fresh chives (chopped)
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 2 to 3 ripe tomatoes (sliced thin)
  • 1 tablespoon mayonnaise (optional)
  • Fresh basil leaves (optional)
  • Butter or lettuce leaves for layering (optional)

Instructions

  1. Prepare Cream Cheese Mixture: In a small bowl, mix the softened cream cheese with chopped chives, garlic powder, salt, and black pepper until smooth and well combined.
  2. Assemble Sandwiches: Lightly toast the bread if desired. Spread a thin layer of mayonnaise (if using) on one slice of each sandwich. Spread a generous layer of the cream cheese mixture on the other slice. Layer thinly sliced tomatoes evenly over the cream cheese. Add fresh basil, lettuce, or a touch of butter if desired.
  3. Finish and Serve: Top with the second slice of bread, cut in halves or quarters, and serve immediately.

Notes

  • For tea sandwiches, trim the crusts and cut into small triangles or squares.
  • Use heirloom or cherry tomatoes for color and flavor variety.
  • Can be made ahead and chilled for up to 2 hours before serving.
