A delightful and easy-to-make Toasted Chicken Salad Wrap recipe that combines tender chicken, crisp veggies, and a creamy dressing wrapped in a warm tortilla. Perfect for a quick and satisfying lunch or dinner option.
Ingredients
Chicken Salad:
2 cups cooked shredded or chopped chicken breast, ¼ cup mayonnaise, 2 tablespoons plain Greek yogurt, 1 tablespoon Dijon mustard, 1 teaspoon lemon juice, ¼ cup finely diced celery, ¼ cup chopped red grapes or apples, 1 tablespoon chopped fresh parsley, salt and black pepper to taste.
Wraps:
4 large flour tortillas or wraps, 1 cup shredded lettuce or baby spinach, ½ cup shredded cheddar cheese (optional), olive oil or cooking spray for toasting.
Instructions
- Prepare Chicken Salad: In a mixing bowl, combine chicken, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, celery, grapes or apples, parsley, salt, and pepper. Mix well.
- Assemble Wraps: Lay out tortillas and spoon chicken salad onto each. Top with lettuce or spinach and cheddar cheese if desired. Roll up tightly, folding in the sides.
- Toast Wraps: Heat a skillet, add oil, place wraps seam-side down, toast for 2–3 minutes per side until golden and warm. Slice and serve.
Notes
- Leftover rotisserie chicken works well.
- Wraps can be prepared in advance and toasted when ready to serve.
- Enhance with avocado slices or crispy bacon for added flavor.
