Ingredients

Scale

Cookies:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon instant espresso powder
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/4 cup mascarpone cheese

Topping:

  • 1/4 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons mascarpone cheese
  • cocoa powder for dusting

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and espresso powder. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  4. Add mix-ins: Fold in the mini chocolate chips and mascarpone cheese until evenly distributed.
