Filling and Topping:
- 1/2 cup fruit jam or preserves (such as raspberry, strawberry, or apricot)

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Prepare the dough: In a medium bowl, whisk together the flour and salt. In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the egg yolk, vanilla extract, and almond extract if using. Gradually add the flour mixture, mixing until a soft dough forms.
- Shape the cookies: Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Use your thumb or the back of a spoon to gently press an indentation into the center of each ball.
- Add the filling: Fill each indentation with about 1/2 teaspoon of jam.
- Bake: Bake for 12–14 minutes, or until the edges are lightly golden.
- Cool and serve: Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
