Instructions

  1. Preheat the oven: Preheat your oven to 170°C (338°F) to prepare for baking the brownies.
  2. Prepare the tin: Line a 21cm x 28cm metal brownie tin with baking paper on all sides to prevent sticking and ensure easy removal.
  3. Melt the chocolate: Melt the butter and dark chocolate together in a double boiler, stirring until smooth. Set aside to cool slightly.
  4. Beat the eggs: In a large bowl, beat the castor sugar, eggs, and vanilla extract together until the mixture is light, fluffy, and has roughly doubled in volume.
  5. Combine the wet ingredients: Gently stir the cooled chocolate and butter mixture into the egg mixture until well combined.
  6. Add the dry ingredients: Sift the cake flour and baking powder into a separate bowl, then fold them into the chocolate batter gently to combine without overmixing.
