Description

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 teaspoon ground cumin

Soup Base:

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can diced tomatoes, with juices
  • 1 (10-ounce) can Rotel tomatoes, diced tomatoes with green chiles
  • 2 cups beef broth
  • Salt and pepper, to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Avocado
  • Tortilla chips
  • Cilantro

Instructions

  1. Cook Ground Beef: In a large pot over medium heat, cook the ground beef until browned. Drain excess grease if needed.
  2. Sauté Aromatics: Add diced onion and garlic to the pot and sauté until softened, about 3–4 minutes.
  3. Add Seasonings: Stir in taco seasoning and cumin, cooking for another 1–2 minutes.
  4. Combine Ingredients: Add black beans, pinto beans, corn, diced tomatoes, Rotel, and beef broth. Stir well to combine.
  5. Simmer: Bring the soup to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.
  6. Adjust Seasoning: Taste and adjust seasoning with salt and pepper as needed.
  7. Serve: Serve hot with your favorite toppings like shredded cheese, sour cream, or tortilla chips.
