  • 6 banana peppers (tops cut, seeds removed)
  • 1 pound ground Italian sausage (or ground beef)
  • 1/2 cup cooked white rice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tomato Sauce:

  • 2 cups marinara or tomato sauce
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Shredded mozzarella cheese for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the Tomato Sauce: Sauté diced onion in olive oil until soft. Add garlic, marinara sauce, oregano, and red pepper flakes. Simmer for 5–7 minutes.
  3. Prepare the Stuffed Peppers: Mix sausage, rice, Parmesan, parsley, egg, salt, and pepper. Stuff each pepper with the mixture.
  4. Bake: Spread tomato sauce in a baking dish, arrange peppers, pour remaining sauce on top. Bake covered for 35 minutes, then uncovered with mozzarella for 10–15 minutes.
