Instructions
- Make the Simple Syrup: In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely to make a simple syrup. Remove from heat and let cool to room temperature.
- Prepare the Sorbet Base: In a blender or food processor, purée the strawberries until smooth. Add the cooled simple syrup, lemon juice, and salt, then blend again until fully combined.
- Strain the Mixture: Pour the mixture through a fine-mesh sieve into a bowl to remove seeds if desired.
- Chill the Mixture: Chill the mixture in the refrigerator for at least 2 hours.
- Churn the Sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until thick and slushy.
- Freeze the Sorbet: Transfer the churned sorbet to a lidded container and freeze for at least 4 hours or until firm.
Notes
- If you don’t have an ice cream maker, pour the mixture into a shallow dish, freeze for 30 minutes, then stir with a fork. Repeat every 30 minutes until frozen and fluffy.
- For an adult twist, add a splash of vodka or strawberry liqueur before churning to keep it scoopable.
