  • coarse sugar or sea salt for dusting

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar: In a large mixing bowl, cream butter and sugar until light and fluffy.
  4. Add wet ingredients: Add eggs one at a time, then mix in vanilla, lime zest, and lime juice. Stir in mango purée and tequila.
  5. Combine wet and dry: Alternately add dry ingredients and milk to the wet mixture, mixing until just combined. Divide batter into liners and bake.
  6. Fill cupcakes: Once cooled, remove a portion from the center of each cupcake and fill with strawberry preserves or chopped strawberries.
