Description

  • ⅓ cup diced fresh mango
  • ⅓ cup diced fresh strawberries

Frosting:

  • ½ cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 2 cups powdered sugar
  • ¼ cup strawberry puree
  • 12 tablespoons mango puree
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare dry ingredients: Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar: In a separate large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs and flavoring: Add the eggs one at a time, mixing well, then stir in the vanilla extract.
  5. Combine wet and dry ingredients: Add the dry ingredients in three additions, alternating with the milk, beginning and ending with dry ingredients.
  6. Add fruit: Gently fold in the diced mango and strawberries.
  7. Bake: Divide the batter into cupcake liners and bake for 18–20 minutes until a toothpick inserted comes out clean.
  8. Make frosting: Beat butter and cream cheese, gradually add powdered sugar, mix in fruit purees and salt until light and fluffy.
  9. Decorate: Pipe or spread frosting onto cooled cupcakes.
