Description

Strawberry Eclair Cake is a delightful no-bake layered dessert featuring a buttery graham cracker crust, creamy vanilla pudding whipped with heavy cream, fresh sliced strawberries, and a luscious chocolate glaze. This chilled treat is perfect for gatherings and offers a rich, creamy texture with a refreshing strawberry touch.

Ingredients

Scale

Crust

  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar

Filling

  • 2 cups heavy whipping cream
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup milk
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries (for layering and garnish)

Chocolate Glaze

  • 1/2 cup chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until combined, then firmly press the mixture into the bottom of a 9×13-inch pan to form an even crust layer.
  2. Make the pudding mixture: In a separate bowl, whisk together heavy whipping cream, instant vanilla pudding mix, milk, powdered sugar, and vanilla extract until the mixture thickens and becomes smooth, resembling a creamy filling.
  3. Layer pudding and strawberries: Spread half of the pudding mixture evenly over the graham cracker crust. Arrange a layer of fresh sliced strawberries over this pudding layer.
  4. Add remaining pudding: Spread the remaining pudding mixture smoothly over the strawberry layer to cover the berries completely.
  5. Prepare chocolate glaze: In a microwave-safe bowl, melt the chocolate chips and heavy cream together in 30-second intervals, stirring between each until the mixture is smooth and glossy.
  6. Top with chocolate and chill: Drizzle the melted chocolate glaze evenly over the top of the cake. Place the cake in the refrigerator and chill for at least 4 hours or preferably overnight to allow the dessert to set properly.
  7. Garnish and serve: Before serving, garnish the top with additional fresh strawberries for an attractive finish and added freshness.

Notes

  • Use fresh, ripe strawberries for the best flavor and texture.
  • For a quicker set, you can refrigerate the cake overnight.
  • To make slicing easier, run a warm knife under hot water and dry it before cutting.
  • Chocolate glaze can also be made using semi-sweet or dark chocolate chips depending on your preference.
  • This dessert can be stored covered in the refrigerator for up to 3 days.
