- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large egg

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips (optional)
Cheesecake Filling:
- 4 oz cream cheese (softened)
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Pulse strawberries: In a food processor, pulse the freeze-dried strawberries into a fine powder and set aside.
- Prepare cookie dough: Beat butter, sugars, egg, and vanilla until creamy. In another bowl, mix flour, strawberry powder, baking soda, and salt. Combine wet and dry ingredients, then fold in white chocolate chips.
- Make filling: Mix cream cheese and powdered sugar until smooth.
- Assemble: Scoop dough, add filling, top with more dough, and seal edges. Repeat.
- Bake: Place dough balls on baking sheet and bake for 11–13 minutes. Cool before serving.
