Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Prepare the cookie dough: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture. Fold in white chocolate chips and freeze-dried strawberries.
  3. Make the cheesecake filling: In a small bowl, beat cream cheese with powdered sugar and lemon juice until smooth.
  4. Assemble the cookies: Scoop about 2 tablespoons of cookie dough, flatten it, place a small teaspoon of the cream cheese mixture in the center, cover with another tablespoon of cookie dough, and seal the edges. Place cookies on prepared sheets.
