Description

These Strawberry Breakfast Popsicles are a delicious and nutritious way to start your day or enjoy a refreshing snack. Made with fresh strawberries, creamy Greek yogurt, rolled oats, and natural sweeteners, they offer a perfect balance of flavors and textures. Easy to prepare and perfect for warm mornings, these popsicles combine the goodness of fruit, protein, and fiber in a convenient frozen treat.

Ingredients

Scale

Fruit

  • 2 cups fresh strawberries, hulled and sliced

Dairy & Alternatives

  • 1 ½ cups plain Greek yogurt (or your favorite yogurt)
  • ½ cup milk (dairy or non-dairy)

Grains

  • ½ cup rolled oats

Sweeteners

  • ¼ cup honey or maple syrup (or to taste)

Flavorings

  • 1 teaspoon vanilla extract (optional)
  • A squeeze of lemon juice (optional, to enhance flavor)

Instructions

  1. Wash and Slice Strawberries: Rinse the fresh strawberries under cold water and remove the hulls. Slice the strawberries into smaller pieces for easier blending.
  2. Measure the Ingredients: Measure out the Greek yogurt, rolled oats, honey or maple syrup, milk, and vanilla extract (if using).
  3. Combine Ingredients: In a blender, combine the sliced strawberries, Greek yogurt, rolled oats, honey or maple syrup, milk, and vanilla extract (if using).
  4. Blend Until Smooth: Blend the ingredients on high speed until you achieve a smooth and creamy consistency. If the mixture is too thick, add a little more milk to reach your desired consistency.
  5. Taste and Adjust: Taste the blended mixture and adjust the sweetness by adding more honey or maple syrup, if needed. A squeeze of lemon juice can also enhance the flavor.
  6. Pour into Popsicle Molds: Carefully pour the blended mixture into popsicle molds, leaving a little space at the top for expansion during freezing.
  7. Insert Popsicle Sticks: Insert popsicle sticks into the center of each mold.
  8. Freeze: Place the popsicle molds in the freezer and freeze for at least 4-6 hours, or until the popsicles are completely solid.
  9. Unmold Popsicles: To unmold the popsicles, run the molds under warm water for a few seconds to loosen the popsicles. Gently pull on the popsicle sticks to release the popsicles from the molds.
  10. Serve: Serve the Strawberry Breakfast Popsicles immediately and enjoy!

Notes

  • You can use any type of yogurt and milk, including dairy-free options, to suit dietary preferences.
  • Adjust the sweetness according to your taste by varying the amount of honey or maple syrup.
  • The rolled oats add a nice texture and help make the popsicles more filling.
  • If you don’t have popsicle molds, you can use small paper cups with wooden sticks as a substitute.
  • Adding a squeeze of lemon juice brightens the flavor but is optional.
  • For a creamier texture, use Greek yogurt; for a lighter version, opt for regular yogurt.
