Cauliflower Patties:
- 2 cups riced cauliflower (fresh or frozen and thawed)
- 1 cup chopped fresh spinach
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour or breadcrumbs
- 1 egg
- 1 clove garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- olive oil for pan-frying
Instructions
- Prepare Cauliflower Mixture: Steam or microwave cauliflower until tender. Squeeze out excess moisture. Combine with spinach, cheeses, almond flour, egg, garlic, and seasonings.
- Form Patties: Shape mixture into 6–8 patties.
- Cook Patties: Pan-fry patties in olive oil until golden and firm on each side.
- Serve: Drain excess oil on paper towels and serve warm.
