- 1 pound boneless skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, minced (seeds removed for less heat)
- 1 can (14.5 ounces) fire-roasted diced tomatoes
- 4 cups chicken broth
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- Salt and black pepper to taste
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- Avocado slices for garnish (optional)
Instructions
- Season chicken: Season chicken with salt and black pepper.
- Sauté vegetables: In a large pot over medium heat, heat olive oil. Add onion, bell pepper, and jalapeño; cook for 4-5 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add ingredients: Add chicken, diced tomatoes, chicken broth, corn, chili powder, cumin, smoked paprika, and cayenne pepper. Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes or until chicken is cooked through.
- Shred chicken: Remove chicken, shred with two forks, and return to the pot. Stir in lime juice and cilantro.
- Adjust seasoning and serve: Taste and adjust seasoning if needed. Serve hot, topped with avocado slices if desired.
Notes
- For a thicker soup, stir in 1/2 cup cooked rice or quinoa before serving.
- You can replace chicken with turkey or use vegetable broth and chickpeas for a vegetarian version.
