- 1 tablespoon sugar (optional)
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter or bacon grease (plus more for frying)
- 1/4 cup water (as needed for thinning)

- Dry Ingredients: In a medium bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar if using.
- Wet Ingredients: In a separate bowl, whisk the buttermilk, egg, and melted butter or bacon grease. Combine wet and dry ingredients, adding water if needed.
- Cooking: Heat a skillet, spoon batter, flatten, and cook hoecakes until golden brown and crisp on the edges. Drain on paper towels and serve warm.
Notes
- For extra flavor, add chopped green onion or corn kernels.
- Traditionally fried in bacon grease, butter or oil can also be used.
- Best served hot.
