Description

Sopapilla Cheesecake Bars combine flaky crescent roll dough with a creamy sweetened cream cheese filling, topped with cinnamon sugar and melted butter for a deliciously simple dessert. These bars are perfect for potlucks, brunches, or a quick and satisfying sweet treat that can be served warm or chilled.

Ingredients

Scale

Dough

  • 2 cans (8 oz each) refrigerated crescent roll dough

Filling

  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract

Topping

  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare baking dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Form bottom crust: Unroll one can of crescent roll dough and press it firmly into the bottom of the prepared baking dish, making sure to seal any seams so the crust is solid.
  3. Make cream cheese filling: In a medium bowl, beat the softened cream cheese with 1 cup of granulated sugar and 1 teaspoon of vanilla extract until the mixture is smooth and creamy with no lumps.
  4. Spread filling: Evenly spread the cream cheese mixture over the crescent roll crust, smoothing it into an even layer.
  5. Add top crust: Unroll the second can of crescent roll dough and carefully lay it over the cream cheese layer, gently pressing the seams together to enclose the filling.
  6. Apply topping: Pour the melted butter evenly over the top dough layer. In a small bowl, combine the remaining 1/4 cup granulated sugar with 1 teaspoon ground cinnamon, then sprinkle this cinnamon sugar mixture evenly over the butter layer.
  7. Bake: Place the baking dish in the oven and bake for 30 to 35 minutes, or until the bars are golden brown and the filling is set.
  8. Cool and serve: Remove from the oven and allow the bars to cool for at least 30 minutes before slicing into 12 bars. Serve warm or chilled as desired.

Notes

  • For added texture and flavor, drizzle honey over the bars after baking or sprinkle with chopped pecans.
  • These bars are ideal for potlucks, brunches, or an easy dessert option.
  • You can store leftovers covered in the refrigerator for up to 3 days.
