Chicken:

  • 4 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Creamed Spinach:

  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 3 cups fresh spinach (roughly chopped)
  • ½ cup sun-dried tomatoes (drained and chopped)
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sear the chicken: Season chicken breasts with salt and pepper. Sear in a skillet until golden brown. Remove and set aside.
  3. Prepare the creamed spinach: In the same skillet, melt butter, sauté garlic, add cream, Parmesan, seasoning, and spinach. Cook until wilted. Stir in sun-dried tomatoes.
  4. Assemble and bake: Return chicken to the skillet, cover with sauce and mozzarella. Bake for 20–25 minutes until cooked through.
  5. Serve: Enjoy warm with preferred sides.
