Bread:

  • 4 slices of hearty whole grain or rye bread

Smoked Salmon:

  • 4 oz smoked salmon

Cream Cheese Mixture:

  • 4 tablespoons cream cheese (softened)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon lemon juice

Filling:

  • 1 small cucumber (thinly sliced)
  • ½ small red onion (thinly sliced)
  • 1 cup arugula or baby spinach
  • Salt and black pepper to taste

Instructions

  1. Prepare Cream Cheese Mixture: In a small bowl, mix the cream cheese with chopped dill and lemon juice until smooth.
  2. Assemble Sandwiches: Toast the bread slices lightly if desired. Spread the herbed cream cheese evenly onto all four slices. Layer two slices with arugula, cucumber, smoked salmon, and red onion.
