  • 2 tablespoons curry powder

  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)

  • 1/2 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (13.5-ounce) can coconut milk
  • 1 tablespoon tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 cups baby potatoes (halved)

Garnish:

  • 1/2 cup chopped fresh cilantro (optional)

Instructions

  1. Sear Beef: Heat oil in a skillet and brown beef cubes in batches. Transfer to slow cooker.
  2. Prepare Curry Sauce: Sauté onion, garlic, and ginger. Add spices and cook briefly. Transfer to slow cooker.
  3. Cook in Slow Cooker: Add tomatoes, coconut milk, tomato paste, sugar, lime juice, and potatoes to the slow cooker. Cook on low for 7-8 hours or high for 4-5 hours.
  4. Serve: Garnish with cilantro before serving.
