  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional topping)
  • 1 tablespoon olive oil (if using breadcrumbs)

Instructions

  1. Preheat Oven: Preheat oven to 350°F and grease a 9×9-inch baking dish.
  2. Sauté Vegetables: In a skillet, melt butter and sauté onion, bell pepper, and garlic until soft.
  3. Cook Shrimp: Add chopped shrimp to the skillet and cook until pink.
  4. Combine Ingredients: In a bowl, mix rice, soup, mayonnaise, cheese, and seasonings. Add shrimp and vegetables.
  5. Bake: Transfer mixture to baking dish, top with Parmesan and breadcrumbs, then bake for 25–30 minutes.
  6. Serve: Rest for 5 minutes before serving.

Notes

  • You can use pre-cooked shrimp; just chop and stir in after sautéing the vegetables.
