Instructions

  1. Prepare the Rice: Cook the rice according to package instructions. For white rice, bring 2 cups of water or broth to a boil, reduce to a simmer, cover, and cook for about 15 minutes until tender and water is absorbed. Fluff with a fork and set aside.
  2. Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, smoked paprika, ground cumin, garlic powder, salt, and pepper until evenly coated.
  3. Cook the Shrimp: Heat a large skillet or grill pan over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until shrimp turns pink and opaque. Remove from heat and set aside.
  4. Make the Pineapple Salsa: In a small bowl, combine diced pineapple, red onion, jalapeño (if using), chopped cilantro, lime juice, and a pinch of salt and pepper. Stir well to blend the flavors.
