- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy), casings removed
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 (14.5-ounce) can diced tomatoes with juice
- 4 cups chicken broth
- 1 (15-ounce) can white beans (such as cannellini), drained and rinsed
- 1 1/2 cups chopped kale or spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- Grated Parmesan cheese and chopped parsley for garnish
Instructions
- Heat olive oil in a large soup pot over medium heat. Add sausage and cook until browned.
- Add onion, garlic, carrots, and celery, sauté until softened.
- Stir in tomatoes, broth, and beans. Season with Italian seasoning, salt, pepper, and red pepper flakes.
- Bring to a boil, then simmer for 15 minutes.
- Stir in kale or spinach and simmer for another 5 minutes.
- Adjust seasoning if needed. Serve hot, garnished with Parmesan and parsley.
Notes
- For a creamy version, stir in 1/2 cup of heavy cream before serving.
- This soup also works well with turkey sausage or plant-based sausage alternatives.
