Instructions
- Cook Sausage: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add Italian sausage and cook until browned, breaking it up with a spoon, about 6–7 minutes.
- Sauté Onion and Spices: Add diced onion and sauté until softened. Stir in garlic, basil, oregano, and red pepper flakes; cook for another 30 seconds.
- Add Tomatoes and Broth: Pour in diced tomatoes and chicken broth. Bring to a boil, then simmer for 5–10 minutes.
- Cook Tortellini: Add tortellini and cook according to package directions, about 4–5 minutes. Stir in spinach and let wilt for 1–2 minutes.
- Finish Soup: Remove from heat, stir in heavy cream, adjust seasoning, and serve hot topped with Parmesan cheese.
Notes
