Description

Salmon-Stuffed Avocados are a quick and nutritious appetizer or light meal featuring creamy ripe avocados filled with a flavorful mixture of wild-caught salmon, Greek yogurt, mustard, and fresh herbs. This no-cook recipe combines the richness of avocado with the tangy and savory flavors of salmon and seasonings, making it perfect for a healthy, protein-packed dish ready in just 10 minutes.

Ingredients

Scale

Avocados

  • 2 ripe avocados, halved and pitted

Salmon Mixture

  • 1 (6 oz) can wild-caught salmon, drained and flaked (or cooked fresh salmon, flaked)
  • 2 tablespoons Greek yogurt or mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon red onion, finely diced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Garnish (optional)

  • 1 teaspoon smoked paprika
  • Fresh parsley or additional dill

Instructions

  1. Prepare the avocados: Cut the avocados in half and remove the pits. Carefully scoop out a bit of the flesh from each half to create a cavity for the salmon filling. Keep the scooped-out avocado flesh aside for the filling mixture.
  2. Make the salmon filling: In a medium bowl, combine the flaked salmon, Greek yogurt or mayonnaise, Dijon mustard, lemon juice, finely diced red onion, chopped fresh dill, and the reserved avocado flesh. Mix well until all ingredients are thoroughly incorporated. Season the mixture with salt and pepper to taste.
  3. Stuff the avocados: Spoon the salmon mixture evenly into each avocado half, gently packing it in to fill the cavity without overflowing.
  4. Add garnish: Sprinkle the stuffed avocados with smoked paprika for a hint of smoky flavor and vibrant color. Garnish with fresh parsley or additional dill if desired to enhance presentation and freshness.
  5. Serve or refrigerate: Serve the salmon-stuffed avocados immediately for best texture and flavor, or place them in the refrigerator for up to 2 hours before serving to chill and allow flavors to meld.

Notes

  • You can substitute Greek yogurt with mayonnaise based on your preference for creaminess and flavor.
  • Use fresh wild-caught salmon if canned salmon is not available; just ensure it is cooked and flaked before mixing.
  • For extra crunch, add finely diced celery or cucumber to the salmon mixture.
  • This recipe is best served fresh to prevent avocados from browning. If needed, brush avocado halves lightly with lemon juice to slow oxidation.
  • Adjust the seasoning to your taste, especially salt and pepper, as canned salmon can vary in saltiness.
