Rogan Josh is a classic Indian lamb curry that is rich, aromatic, and full of flavor. This recipe combines tender lamb with a blend of fragrant spices and yogurt for a creamy texture. Perfect served with basmati rice or naan bread.

For the Rogan Josh:
- 2 tablespoons vegetable oil
- 2 pounds lamb shoulder or leg, cut into 1.5-inch pieces
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1/2 cup plain yogurt, at room temperature
- 2 teaspoons ground coriander
- 1 1/2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon ground turmeric
- 1 1/2 teaspoons garam masala
- 1/2 teaspoon ground cinnamon
- 2 tablespoons tomato paste
- 1 cup beef or lamb broth
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat the oil: In a large heavy-bottomed pot over medium-high heat, add the oil.
- Brown the lamb: Add the lamb in batches, sear until browned, then set aside.
- Sauté aromatics: In the same pot, cook the onion until golden, then add garlic and ginger.
- Add spices: Stir in yogurt, coriander, cumin, paprika, cayenne, turmeric, garam masala, and cinnamon.
- Cook lamb: Return lamb to the pot, add tomato paste, broth, simmer covered for 1.5-2 hours.
- Adjust seasoning: Stir occasionally, adjust salt to taste. Garnish with cilantro.
Notes
- Rogan Josh pairs well with basmati rice or naan bread.
- You can also cook it in a slow cooker on low for 6–7 hours.
- For a spicier dish, increase the cayenne or add fresh green chilies.
