Description

Rogan Josh is a classic Indian lamb curry that is rich, aromatic, and full of flavor. This recipe combines tender lamb with a blend of fragrant spices and yogurt for a creamy texture. Perfect served with basmati rice or naan bread.

For the Rogan Josh:

  • 2 tablespoons vegetable oil
  • 2 pounds lamb shoulder or leg, cut into 1.5-inch pieces
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1/2 cup plain yogurt, at room temperature
  • 2 teaspoons ground coriander
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground turmeric
  • 1 1/2 teaspoons garam masala
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons tomato paste
  • 1 cup beef or lamb broth
  • Salt to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat the oil: In a large heavy-bottomed pot over medium-high heat, add the oil.
  2. Brown the lamb: Add the lamb in batches, sear until browned, then set aside.
  3. Sauté aromatics: In the same pot, cook the onion until golden, then add garlic and ginger.
  4. Add spices: Stir in yogurt, coriander, cumin, paprika, cayenne, turmeric, garam masala, and cinnamon.
  5. Cook lamb: Return lamb to the pot, add tomato paste, broth, simmer covered for 1.5-2 hours.
  6. Adjust seasoning: Stir occasionally, adjust salt to taste. Garnish with cilantro.

Notes

  • Rogan Josh pairs well with basmati rice or naan bread.
  • You can also cook it in a slow cooker on low for 6–7 hours.
  • For a spicier dish, increase the cayenne or add fresh green chilies.
