Ingredients

Paccheri Pasta:

12 oz paccheri pasta

Garlic Oil:

1 tablespoon olive oil, 2 cloves garlic (minced)

Cheese Mixture:

1 1/2 cups ricotta cheese, 1/2 cup grated Parmesan cheese, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon nutmeg (optional), 1/2 cup chopped fresh parsley, 1/4 cup reserved pasta water, zest of 1 lemon (optional)


Instructions

  1. Cook Paccheri: Boil salted water, cook paccheri until al dente, reserve pasta water.
  2. Sauté Garlic: Heat olive oil, sauté garlic until fragrant.
  3. Mix Cheese: Combine ricotta, Parmesan, salt, pepper, nutmeg, parsley, sautéed garlic, and pasta water.
  4. Toss Pasta: Mix drained paccheri with ricotta mixture until coated.
  5. Serve: Garnish with parsley and lemon zest, serve warm.
