For the Chicken:
- 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
For the Rice:
- 2 cups jasmine rice, rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups chicken broth
- 1/2 cup frozen peas and carrots
- 2 green onions, sliced (for garnish)
Instructions
- Marinate the Chicken: In a bowl, combine the chicken, soy sauce, oyster sauce, sesame oil, black pepper, garlic powder, and ginger powder. Marinate for at least 15 minutes.
- Prep the Rice Cooker: Add rinsed rice to the rice cooker pot, followed by chopped onion and garlic.
- Layer Ingredients: Spread the marinated chicken over the rice, then pour in the chicken broth. Stir gently to mix.
- Cook: Set the rice cooker to the “white rice” setting. When done, add frozen peas and carrots. Fluff rice, mix, and let sit for 5–10 minutes on warm.
- Serve: Garnish with sliced green onions and enjoy hot.
Notes
- You can use chicken breast instead of thighs if desired.
