Fresh Strawberry Jam:

- Combine Ingredients: In a medium saucepan, combine strawberries, sugar, lemon juice, lemon zest (if using), and salt. Stir over medium heat until the sugar dissolves and the strawberries begin to release their juices.
- Cook Mixture: Bring the mixture to a gentle boil, then reduce heat to a simmer. Cook for 15 to 20 minutes, stirring often and mashing the strawberries slightly with a fork or potato masher.
- Thicken Jam: Continue simmering until the mixture thickens and reaches a jam-like consistency. To test, place a small spoonful on a chilled plate—if it wrinkles slightly when pushed, it’s ready.
- Cool and Store: Remove from heat and let cool. Transfer to a clean jar and refrigerate. The jam will continue to thicken as it cools.
