Fresh Strawberry Jam:

- Prepare the Jam: In a medium saucepan, combine strawberries, sugar, lemon juice, lemon zest (if using), and salt. Stir well and let sit for 10 minutes to allow the strawberries to release their juices.
- Cook the Jam: Place the pan over medium heat and bring the mixture to a simmer, stirring frequently. Use a potato masher or spoon to mash the strawberries to your desired consistency. Simmer for 15–20 minutes, stirring occasionally, until the mixture thickens and coats the back of a spoon.
- Finish and Store: Remove from heat and let cool slightly. Transfer jam to a clean jar or container and refrigerate. The jam will continue to thicken as it cools.
