For the frosting:

  • 1/2 cup unsalted butter (softened)
  • 6 oz white chocolate (melted and cooled)
  • 3–3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a small bowl, combine the buttermilk, vinegar, vanilla extract, and purple food coloring.
  4. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  5. Alternately add the dry ingredients and buttermilk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide the batter evenly among the prepared pans and smooth the tops. Bake for 22–25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the frosting, beat the cream cheese and butter until smooth. Add the melted white chocolate, vanilla, and salt, and mix until combined. Gradually add powdered sugar until the frosting reaches a spreadable consistency.
  9. Frost the cooled cake layers, stacking them evenly, and smooth the outside with the remaining frosting. Chill for 30 minutes before slicing for best results.
