For the dough:
- 1 1/2 cups self-rising flour
- 1 cup plain Greek yogurt
- 1 scoop (about 30g) vanilla or cinnamon protein powder
For the filling:
- 2 tablespoons melted butter or coconut oil
- 2 tablespoons brown sugar or coconut sugar
- 1 tablespoon ground cinnamon
For the glaze:
- 1/2 cup powdered sugar (or protein-friendly alternative)
- 1–2 tablespoons milk (or unsweetened almond milk)
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F and lightly grease a small baking dish or line with parchment paper.
- Prepare the dough: In a large bowl, combine the self-rising flour, Greek yogurt, and protein powder. Mix until a dough forms, then knead on a lightly floured surface for 2–3 minutes until smooth.
- Fill and roll: Roll the dough into a rectangle, brush with melted butter, sprinkle with brown sugar and cinnamon. Roll the dough into a log, slice into pieces, and place in the baking dish.
- Bake: Bake for 18–22 minutes until golden.
- Make the glaze: Whisk together powdered sugar, milk, and vanilla extract. Drizzle over warm rolls before serving.
