Ingredients
Scale
Potato Mixture
- 4 russet potatoes, cooked and mashed
- 2 green onions, chopped
- 1/4 cup sour cream
- Salt, to taste
- Pepper, to taste
Cheese
- 8 oz cheddar cheese block, cut into strips
Coating
- 1/2 cup flour
- 1 egg, beaten
- 1/2 cup cornstarch
- 1 cup panko breadcrumbs
For Frying
- Vegetable oil (for frying)
Instructions
- Prepare the Potatoes: Mash the cooked russet potatoes in a large bowl until they are mostly smooth, leaving a few chunks for texture. Add the chopped green onions, sour cream, salt, and pepper, then mix everything thoroughly to combine the flavors.
- Form the Balls: Take a spoonful of the mashed potato mixture and flatten it in your palm. Place a cheddar cheese strip in the center, then wrap the potato mixture around the cheese completely to form a ball. Repeat this process for all the potato mixture and cheese.
- Prepare the Coating: Arrange three separate bowls: one with flour, one with the beaten egg, and one with a mixture of cornstarch and panko breadcrumbs. For each potato ball, first coat it evenly with flour, then dip it into the beaten egg, and finally roll it in the cornstarch-panko mixture until fully coated.
- Fry the Potato Cheese Sticks: Heat vegetable oil in a deep fryer or a large, deep pot to 350°F (180°C). Carefully place the coated potato balls into the hot oil in batches to avoid overcrowding. Fry them for about 3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels to remove excess oil.
- Serve: Serve the potato cheese sticks hot so the cheese inside remains gooey. Enjoy as a crispy, flavorful snack or appetizer.
Notes
- Make sure the potatoes are well drained before mashing to prevent a watery mixture.
- Cheese sticks should be fully enclosed to avoid leakage during frying.
- Maintain the oil temperature for even frying and crispiness.
- Variations can include adding spices or herbs to the potato mixture for extra flavor.
- Leftovers can be reheated in an oven to maintain crispiness rather than microwaving.
