Description

Instructions

  1. Prepare the Potatoes: Mash the cooked russet potatoes in a large bowl until they are mostly smooth, leaving a few chunks for texture. Add the chopped green onions, sour cream, salt, and pepper, then mix everything thoroughly to combine the flavors.
  2. Form the Balls: Take a spoonful of the mashed potato mixture and flatten it in your palm. Place a cheddar cheese strip in the center, then wrap the potato mixture around the cheese completely to form a ball. Repeat this process for all the potato mixture and cheese.
  3. Prepare the Coating: Arrange three separate bowls: one with flour, one with the beaten egg, and one with a mixture of cornstarch and panko breadcrumbs. For each potato ball, first coat it evenly with flour, then dip it into the beaten egg, and finally roll it in the cornstarch-panko mixture until fully coated.
  4. Fry the Potato Cheese Sticks: Heat vegetable oil in a deep fryer or a large, deep pot to 350°F (180°C). Carefully place the coated potato balls into the hot oil in batches to avoid overcrowding.
