- zest of 2 lemons
- 2 tablespoons lemon juice

- 1 1/2 cups all-purpose flour
- 1/2 cup finely ground pistachios
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice
- 2 tablespoons chopped pistachios for garnish
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
- Mix wet ingredients: Cream butter and sugar, add eggs, mix in yogurt, milk, lemon zest, lemon juice, and vanilla extract.
- Combine dry ingredients: Whisk together flour, ground pistachios, baking powder, baking soda, and salt.
- Combine wet and dry mixtures: Gradually add dry ingredients to wet mixture, pour batter into pan.
- Bake: Bake for 45–50 minutes until a toothpick comes out clean.
- Make the glaze: Whisk powdered sugar and lemon juice, drizzle over cooled loaf, sprinkle with pistachios.
Notes
- For extra lemon flavor, add 1/4 teaspoon lemon extract to the batter.
