Cookie Dough:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Filling:

  • 1 cup mini marshmallows
  • 4 ounces milk chocolate, broken into squares
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make Cookie Dough: In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar. Add egg and vanilla extract, then mix in a separate bowl the flour, baking soda, baking powder, and salt. Combine wet and dry ingredients to form dough.
  3. Assemble Cookies: Roll dough into balls, flatten slightly, and place chocolate and marshmallows on half the cookies. Top with another cookie and seal edges. Roll in graham cracker crumbs.
  4. Bake: Arrange cookies on baking sheet, bake for 10–12 minutes until golden and marshmallows are soft. Cool on a wire rack.

Notes

  • For extra gooey centers, add a dollop of peanut butter with the chocolate and marshmallows.
