Cookie Dough:
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Filling:
- 1 cup mini marshmallows
- 4 ounces milk chocolate, broken into squares
- 1 cup graham cracker crumbs
Instructions
- Preheat Oven and Prepare Baking Sheets: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Make Cookie Dough: In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar. Add egg and vanilla extract, then mix in a separate bowl the flour, baking soda, baking powder, and salt. Combine wet and dry ingredients to form dough.
- Assemble Cookies: Roll dough into balls, flatten slightly, and place chocolate and marshmallows on half the cookies. Top with another cookie and seal edges. Roll in graham cracker crumbs.
- Bake: Arrange cookies on baking sheet, bake for 10–12 minutes until golden and marshmallows are soft. Cool on a wire rack.
Notes
- For extra gooey centers, add a dollop of peanut butter with the chocolate and marshmallows.
- Store cookies in an airtight container for up to 3 days.
