Ingredients

Scale

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Wet Ingredients:

  • 1/2 cup unsalted butter (softened)
  • 4 ounces cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Additional Ingredients:

  • 1 1/2 cups fresh or canned peaches (diced and well-drained)
  • 1 tablespoon all-purpose flour (for tossing peaches)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, salt, and cinnamon.
  3. Prepare Wet Mixture: In a large bowl, beat the butter, cream cheese, and sugar until light and fluffy. Add eggs one at a time, beating well. Mix in vanilla extract.
  4. Combine Ingredients: Alternate adding dry ingredients and milk to the wet mixture. Begin and end with the dry ingredients. Toss diced peaches with 1 tablespoon flour, then gently fold into the batter.
  5. Bake: Pour batter into the loaf pan and bake for 55–65 minutes until a toothpick comes out clean. Cool before serving.

Notes

  • If using canned peaches, pat them dry to avoid excess moisture.
  • Add a simple glaze with powdered sugar and milk if desired.
