Instructions

  1. Cook the Peach Mixture: In a saucepan over medium heat, combine the chopped peaches, granulated sugar, honey or maple syrup, lemon juice, and water. Cook for 5 to 7 minutes, stirring occasionally until the peaches soften and the sugar fully dissolves, creating a fragrant and slightly thickened mixture.
  2. Cool and Puree: Remove the saucepan from heat and allow the peach mixture to cool slightly. Transfer the mixture to a blender or food processor and puree until completely smooth. For an ultra-smooth texture, strain the puree through a fine mesh sieve to remove any pulp or fibrous bits.
  3. Chill the Puree: Place the pureed peach mixture into the refrigerator and chill until it’s fully cold, about 2 hours. This step improves the texture and makes it easier to churn later.
  4. Churn the Sorbet: Pour the chilled puree into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a thick, slushy consistency. This usually takes about 20 to 30 minutes depending on your machine.
  5. Freeze Until Firm: Transfer the churned sorbet into a freezer-safe container, cover it, and freeze for at least 4 hours or until firm enough to scoop nicely.

Notes

  • If you don’t own an ice cream maker, pour the chilled peach puree into a shallow dish and place it in the freezer. Every 30 minutes, stir the mixture thoroughly with a fork to break up ice crystals, repeating until the sorbet is firm and smooth.
  • For added aroma and flavor depth, infuse fresh mint leaves into the peach mixture while it cooks. Remove the mint leaves before blending for a subtle herbal note.
