Ingredients

Scale

Cookies:

  • 1 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Additional:

  • 1/2 cup pastel-colored candy-coated chocolates (such as Easter M&Ms)
  • Optional: colored sanding sugar for rolling

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, salt, and baking powder.
  5. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, mixing just until the dough comes together.
  6. Form cookie dough: Scoop tablespoon-sized portions of dough and roll into balls. Press pastel candies into the center of each cookie and gently flatten the tops.
  7. Optional step: Roll the edges in colored sanding sugar for a festive look.
  8. Bake cookies: Place on the prepared baking sheet about 2 inches apart. Bake for 10 to 12 minutes, or until the edges are just starting to turn golden.
  9. Cool and serve: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
