Ingredients
Scale
For the Pasta
- 12 ounces spaghetti or linguine
For the Sauce
- 2 tablespoons olive oil
- 1 small yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 (28-ounce) can crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon red pepper flakes (optional)
- 1 teaspoon sugar
- Salt and black pepper to taste
For Serving
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package directions until al dente. Drain the pasta well and set aside.
- Sauté the aromatics: Heat olive oil in a large skillet or saucepan over medium heat. Add the finely chopped onion and sauté for 4 to 5 minutes, until softened and translucent. Stir in minced garlic and cook for 1 minute until fragrant, taking care not to burn it.
- Prepare the sauce: Add crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes (if using), sugar, salt, and black pepper to the skillet. Stir well to combine all ingredients evenly.
- Simmer the sauce: Bring the mixture to a gentle simmer. Cook uncovered for 15 to 20 minutes, stirring occasionally, until the sauce thickens slightly and flavors meld together.
- Toss pasta with sauce: Add the cooked pasta to the sauce and toss thoroughly to coat the noodles evenly with the sauce.
- Serve: Plate the pasta and garnish with fresh basil leaves and grated Parmesan cheese if desired. Serve immediately while hot.
Notes
- For a heartier version, add sautéed mushrooms or cooked ground meat to the sauce.
- This dish works well as a standalone meal or as a side to chicken or eggplant Parmesan.
- Adjust red pepper flakes to control spice level according to taste.
- Use fresh herbs if available for enhanced flavor.
