- 2 pounds baby potatoes, halved
Seasoning:
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Finishing Touches:
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the Oven: Preheat the oven to 400°F.
- Prepare Potatoes: In a large bowl, toss halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Add Cheese: Sprinkle Parmesan cheese evenly over the cut sides of the potatoes and press lightly so it sticks.
- Bake: Arrange potatoes cut side down on a baking sheet lined with parchment paper or lightly greased. Bake for 30–35 minutes, or until golden and tender.
- Serve: Remove from the oven, let cool for 5 minutes, then garnish with fresh parsley before serving warm.
Notes
- For extra crispiness, broil the potatoes for the last 2–3 minutes.
- Serve with sour cream, ranch, or marinara for dipping.
- Yukon gold or red potatoes can also be used.
