Pancake Batter:

Instructions
- Preheat oven and prepare pan: Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
- Mix dry ingredients: In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, whisk together buttermilk, egg, melted butter, and vanilla. Pour into the dry ingredients and stir until just combined.
- Fill muffin cups: Spoon about 1 tablespoon of batter into each cup. Press a piece of sausage link into the center of each.
- Bake: Bake for 12–15 minutes or until golden and a toothpick comes out clean. Let cool slightly before removing from the pan.
