Pancake Batter:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
Additional:
- 12 fully cooked breakfast sausage links (cut into thirds)
- Maple syrup for serving
Instructions
- Preheat oven and prep muffin tin: Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
- Mix dry and wet ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, egg, melted butter, and vanilla. Combine wet and dry ingredients, stirring until just mixed.
- Fill muffin cups: Spoon 1 tablespoon of batter into each cup and press a piece of sausage into the center.
- Bake: Bake for 12–15 minutes until golden and a toothpick inserted comes out clean. Cool slightly before removing from pan.
- Serve: Enjoy warm with maple syrup for dipping.
