Pancake Batter:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

Additional:

  • 12 fully cooked breakfast sausage links (cut into thirds)
  • Maple syrup for serving

Instructions

  1. Preheat oven and prep muffin tin: Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Mix dry and wet ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, egg, melted butter, and vanilla. Combine wet and dry ingredients, stirring until just mixed.
  3. Fill muffin cups: Spoon 1 tablespoon of batter into each cup and press a piece of sausage into the center.
  4. Bake: Bake for 12–15 minutes until golden and a toothpick inserted comes out clean. Cool slightly before removing from pan.
