Chicken Parmesan Pasta:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breast, cut into bite-sized pieces

- 1/4 teaspoon black pepper
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 cups marinara sauce
- 2 cups chicken broth
- 8 oz penne or rotini pasta, uncooked
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil or parsley (optional)
- extra Parmesan and crushed red pepper flakes for serving (optional)
Instructions
- Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken with Italian seasoning, garlic powder, salt, and pepper until lightly browned.
- Sauté Onions and Garlic: Add diced onion and minced garlic, sauté until softened.
- Add Sauce and Pasta: Stir in marinara sauce and chicken broth. Add uncooked pasta, bring to a boil, then simmer until pasta is tender.
- Finish with Cheese: Stir in Parmesan, top with mozzarella, cover until cheese melts. Garnish with basil or parsley.
- Serve: Optionally garnish with extra Parmesan and red pepper flakes before serving hot.

- You can use rotisserie chicken for quicker prep.
