  • 8 oz penne or rotini pasta, uncooked

  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil or parsley (optional)
  • extra Parmesan and crushed red pepper flakes for serving (optional)

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken with Italian seasoning, garlic powder, salt, and pepper until lightly browned.
  2. Sauté Onions and Garlic: Add diced onion and minced garlic, sauté until softened.
  3. Add Sauce and Pasta: Stir in marinara sauce and chicken broth. Add uncooked pasta, bring to a boil, then simmer until pasta is tender.
  4. Finish with Cheese: Stir in Parmesan, top with mozzarella, cover until cheese melts. Garnish with basil or parsley.
  5. Serve: Optionally garnish with extra Parmesan and red pepper flakes before serving hot.
